Cheesy Bean Roll Ups
Ingredients
1 Package fajita sized whole wheat tortillas
1 can refried beans
2 cups shredded cheddar cheese
Salsa for dipping
Directions
Spread thin layer of beans on each tortilla
Sprinkle with cheese
Roll each tortilla, place on baking sheet
Brush each roll up with a little canola oil
Bake at 400 for 10 minutes. Serve with salsa
Makes 10 snack size roll ups

Ingredients
12 Eggs
2 Tbsp. butter
1 lb. Sausage (pork, chicken or turkey), cooked and drained
1/2 cup chunky salsa
2 cups Cheddar or Pepper Jack cheese
24 flour tortillas (taco size)
Preparation
In large skillet, melt butter. Beat eggs in large bowl and add to skillet. Cook eggs in butter, stirring frequently, until scrambled and set. Add cooked sausage and salsa to egg mixture and mix gently.
Warm tortillas as directed on package. Place about 1/2 cup egg and sausage mixture onto each tortilla and sprinkle with some cheese. Roll up each tortilla to make burritos, folding in the ends and rolling up. Allow to cool, wrap in seran wrap then foil and package in zip-lock freezer bags.
When you're ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-3 minutes until hot and cheese is melted.
You can also thaw burritos in the refrigerator overnight, then wrap each in foil and bake at 350 degrees for 10-15 minutes until hot. Makes 24 burritos

One of the things my daughter loves is pizza, so we've been coming up with some new creative versions that are a little healthier. You can use English muffins, pita bread, or even the new bagel thins as a crust. Add some sauce, cheese, and your favorite toppings. Place on a pan in the oven at 400 for 5-8" or until cheese is melted. This is a fun kid friendly meal that the kids will enjoy helping to make as well!

Kids Corn Beef & Cabbage
Instructions
Skin potatoes and cut into chunks. Place in bottom of casserole dish.
Clean and skin carrots. Cut them into chunks. Add to potatoes in the bottom of the casserole dish.
Cut onion into slices. Place half the onion in with potatoes and carrots. Save remaining onion.
Shred the cabbage and place on top of ingredients in casserole dish. Set corned beef on top of cabbage making sure to cover entire cabbage. Spoon the cream of mushroom soup (not mixed) over corned beef top. Top with remaining onion.
Cover dish. Place in preheated 375 degree oven. Cook until potatoes, carrots and cabbage are tender, about 30 minutes (depending on how big you cut the potatoes and carrots).
Remove dish from oven, remove the cover and sprinkle cheese on top. Return the dish to the oven, uncovered, just until the cheese is browned.

1 box funfetti cake mix or a different flavor if you prefer
3 eggs
1/3 cup of oil
water
2 cans of icing (with sprinkles on lid)
1 pack of colorful ice cream cones
Preheat your oven to 350 degrees. Prepare the cake batter as directed on the box. Spoon in cake mix about 3/4 full or to the bottom ring (large ring) of the cone. Place carefully on a baking sheet & into the oven for 20 minutes! Cupcakes are finished when you can stick a toothpick in & it comes out clean! Place the hot cones in the freezer to cool! 20 minutes later, you can ice and sprinkle your cute little cupcakes! Your kids are sure to love them!

HOME MADE ICE CREAM IN A BAG!
Milk can become homemade ice cream in five minutes by using a bag! This homemade, creamy treat is a summertime delight for kids and adults alike.
What you'll need:
A 1/2 cup milk will make about 1 scoop of ice cream, so double the recipe if you want more. But don't increase the proportions more that that -- a large amount might be too big for kids to pick-up because the ice itself is heavy.

Shout Out For Children's Museums!
Whenever we visit my parents down in Sebring Florida, we always have to pay a visit or two to the Children's Museum Of The Highlands.
What a great place for the kids to discover and play while learning about the world in which they live. Most children's museums are run as a not for profit establishment, and the majority of the workers are often volunteers.
Alot of places offer annual memberships, which not only help them with their cause, but also allow you to go as many times as you want within the yearly membership period.
Next time you are planning a trip check out the local attractions for a children's museum. I guarantee the kids will love it!

Entertaining Kids on A Budget
One thing we have instituted in our house is a family movie night. It is something we all look forward too, especially the kids, because they get to stay up late and eat good snacks. Having a big family makes going out to the movies very expensive when you add in the pop, snacks and goodies. Plus you can't wear your PJ's to the movies!!!
Fruity Brownie Bites
Ingredients
1 Box Brownie Mix plus ingredients to make according to package directions
1-2 cups of your favorite berry ( I like strawberries & raspberries)
Directions
Preheat oven to 350 degrees
Grease mini muffin pan
Prepare brownie mix according to package directions.
Divide mixture between muffin cups
Press a raspberry, blackberry or strawberry slice into brownie batter
Bake at 350 for 15 minutes

Crispy Fruit Bars3T butter
4 cups miniature marshmallows
5 cups crispy rice cereal
1 cup granola with dried fruit
Directions
n large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Add crispy rice cereal, seeds & fruit. Stir until well coated.
Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

Apple Cinnamon Pancakes

Ingredients
2 eggs
2cups milk
4T canola oil
1c finely chopped apples
1c white flour (unbleached)
1c whole wheat flour
2T ground flax seed
1t vanilla
1t cinnamon
2T sugar
2T baking powder
1t salt
Directions
Combine all dry ingredients in a bowl. Mix eggs, milk, oil & vanilla. Slowly add dry ingredients to wet mixture until combined. Fold in the chopped apples.
Heat griddle or skillet to medium heat. Grease the skillet with butter or cooking spray. Using a 1/4C measure, pour batter onto the hot skillet. Wait until pancake surface starts to bubble then flip, cook for additional 1-2 minutes. As pancakes come off the skillet stack on a plate and allow to cool. To freeze, layer pancakes with wax paper between each one. To serve, separate desired number of pancakes. Heat in microwave or toaster oven for 1-2 minutes.

No Bake Peanut Butter Balls
1/2 cup peanut butter
1/2 cup honey
1 cup crushed corn flakes cereal
2 tablespoons powdered milk
Set corn flakes aside.
Mix all other ingredients well.
Roll into balls.
Then roll again in Cornflakes until covered.
Refrigerate leftovers.

Mixed Berry Smoothie
Ingredients
1 handful fresh or frozen berries , such as antioxidant-rich blueberries, raspberries, blackberries or strawberries
1 spoonful plain, nonfat yogurt
1 Tbsp. honey
Soy milk or nonfat milk
Add berries, yogurt and honey to blender. Cover 3/4 of the mixture with the soy milk or nonfat milk. Blend to your desired consistency. Pour into glasses and serve with fun straws or with a spoon if the smoothie is extra-thick

Crayola Cupcakes!
This is such a creative idea that a friend of mine came up with. I found it on her blog and just loved it. Here is a section from her post;
"First we, mixed up a regular box of yellow cake batter. Then we added a little vanilla flavoring to give the cake a richer taste, but you could add any flavoring you want. Next, we divided the batter equally into three bowls. After dividing the batter, add several drops of food coloring to each bowl and stir. I would recommend using colors that have a drastic contrast. Then scoop a large spoonful of each color in the cupcake tins until they are filled almost to the top. Bake as directed on the box. When the cupcakes are completely cooled, ice them and decorate them. We chose to ice ours in vanilla and roll them in colored sugar. Since these cupcakes were so bright and colorful we decided to call them Crayola Cupcakes.

1 small package banana pudding mix
1 banana cut up
2 cups milk
Mix milk & pudding mix, add chunks of banana
Pour into popsicle molds. Freeze for 3 hours.
